***NOT TO WA, NT***   (Zea mays)  American Appalachian heirloom also known as 'Hickory Cane' introduced over 160 years ago by A.O. Lee of Hickory, Virginia.  Tall stalks to 4m high, producing creamy, white cobs to 23cm long with large kernels.  Used for making cornbread, roasted elote, grits, hominy and nixtamalizing to make Mexican tortillas from scratch.  Unusually, the skin of the corn kernel is easily removed making it easy to process.  15 seeds

Nixtamalising is an ancient method of soaking the dry kernels in a solution of water and slaked lime (calcium hydroxide).

Lime can be substituted with hardwood ash or even baking soda.
