Heirloom first cultivated by the Native Americans.  Also known as 'Earth Apple' or 'Sunchoke'.  Perennial (warm areas) growing to 3m high, with attractive, yellow flowers & producing highly edible roots.  Will die back in winter in cooler areas to appear again in spring.  Roots may be cooked in the same way as potatoes & may be roasted, mashed, sauteed, dipped in batter & fried, or made into soups.  Grows best in temperate areas.  Tubers are harvested 4-6 weeks after flowering.

Note:  1 Tuber will produce one plant
