(Triticum turgidum)  Ancient grain believed to have originated in the fertile crescent with its grain being twice the size and containing more proteins, lipids, amino acids, vitamins and minerals than modern day wheat.  The grain is named after the Khorasan region - an historical area of ancient Persia.  Also known as 'Kamut'. It is known for its smooth texture and nutty, buttery flavour.  Grains may be consumed whole or milled into flour for use in breads, breakfast cereals, cookies, waffles, pancakes, pasta, beer and snacks.  Drought tolerant.

Harvest is the same as the other wheat species. As soon as the grains are mature the grain is threshed and then winnowed.

As a green manure crop it is beneficial for adding bulk organic matter to the soil.

Grows best in areas with cool, wet summers.  Will tolerate a wide range of soil & slightly acid soils.
