(Allium sativum)   Heirloom from Cordoba in Spain.  Very white bulb with tissue-like transparent skin containing dark, red-purple cloves with buff patching and streaks and hot, spicy flavour with persistent heat.  Stores well - up to 12 months meaning you have garlic all year round.  A late-season garlic being harvested 8 weeks after Turbans or when it falls over.  Whilst this cultivar is a smaller bulb, it has a delightful flavour and is well worth the effort, particularly when it is out of season and there is no Australian garlic available.

Grows well from Northern NSW to TAS & across to WA & SA.  Doesn't do well in wet humid conditions & likes dry heat.

In Penny Woodward's book 'Garlic'
Manuel Benitee is placed in the Creole Group. But this cultivar, grown mainly in Tasmania very seldomly grows a scape and is probably better in the Silverskin Group. At one point Creoles and Silverskins were all classed in the one Group and they are quite closely related.

HARVEST:  Mid to Late Season

STORAGE:  Long - up to 12 months or more

TYPE:  Silverskin / Creole

VARIETY:  Hardneck

Pack of 8 cloves

SOFTNECK vs. HARDNECK? (What is the difference?)

SOFTNECK (Allium sativum)

- soft & pliable neck (the stalk that grows up from a garlic) at maturity making them easy to braid
- strong flavour
- harder to peel than hardneck varieties
- stores well (due to several potective outer layers of papery skin)
- produces large & small cloves
- well suited to warmer areas with hot summers & mild winters

HARDNECK (Allium sativum var. ophioscorodon)

- hard & stiff neck (the stalk that grows up from a garlic) at maturity forming scapes which may also be used in cooking
- mild taste
- easy to peel
- best used soon after harvest (due to only a few protective papery layers)
- mainly large cloves around the outside of the bulb
- thrive & grow better in cooler areas
